ROQUEFORT WITH SMOKED BACON

Cut the bacon into thin slices and place in a pan of cold water. Boil for a few minutes, then refresh immediately under cold water. In a mixer, blend the blue cheese, the egg yolk and the cream. Lightly toast the slices of French bread. Spread the blue cheese mixture onto the slices of toast. Decorate the top with a slice of smoked bacon and bake under the oven grill for a few seconds. Serve immediately.
